When it comes to nutrition, it is wiser to choose the middle ground and make wiser decisions – although one must keep a safe distance from the frying pot, try pan frying the vegetables and adding your favourite toppings in smaller quantities to gain maximum benefits.

New Delhi: It is a no-brainer that a healthy diet must include
vegetables due to their nutritional value, fibre and several health benefits. From strengthening bones to supporting eye, heart, skin, metabolic and other body functions – they can do it all. Yet, even with this healthiest food group, it is important to cook the right way as a poor choice may sabotage the benefits and do more harm than good. Experts further say that if one eats vegetables a particular way, they are better off eating fast food – it’s eating
fried vegetables.
Why fried vegetables are not considered healthy
According to nutrition experts, frying does not change the nutritional value of the food – however, what people add to the preparation is what causes damage. The chemical composition of the veggie may not necessarily change – yet, extra oils, sugar,
sodium and refined grains cause damage.
For instance, a cup of fried broccoli contains 279mg of sodium which accounts for 12 per cent of the daily recommended intake. Several studies indicate that eating fried foods could cause serious health problems raising the early death risk due to conditions such as heart disease. Furthermore, according to research published in the Nutrients journal, eating fried foods too often in a week could increase the risk of heart failure, high blood pressure,
obesity and type-2 diabetes. Another study associates them with stroke risk.
Is there a safer way to eat vegetables?
When it comes to nutrition, it is wiser to choose the middle ground and make wiser decisions – although one must keep a safe distance from the frying pot, try pan frying the vegetables and adding your favourite toppings in smaller quantities to gain maximum benefits. For instance, cook broccoli with a tablespoon or two of cheese to enhance the flavour and that is all you need to do.
