How processed is your diet? As much as you might try to cut down on pre-packaged items with lengthy ingredient lists in light of recent headlines about the impact of ultra-processed foods on our health, the chances are that you don’t have the time, money or energy to bake your own bread, soak pulses overnight or cook everything from scratch.
Last week, however, the nutrition guru Professor Tim Spector, head of the department of twin research and genetic epidemiology at King’s College London, admitted on Instagram that even he “likes eating processed foods” — and does so regularly.
His favourites? Packets of pre-prepared lentils (the microwaveable ones that you might have assumed were a no-no), tinned fish, and salt and vinegar-flavoured seaweed crisps.
