22 Easy Ways to Eat More Veggies This Year - Self

It’s an all-too-familiar cycle: You stock up on loads of tasty-looking veggies at the store—only to have them wilt, rot, or go soggy by the end of the week. Regardless of your best intentions, they don’t seem to make it to your table.

And you’re not alone there. More than 90% of folks in the US don’t eat enough of them, according to the CDC. That’s a problem, since produce brings lots of flavor to your plate and serious benefits to your body. “Vegetables are incredibly nutrient-dense,” Jessie Shafer, RDN, a Denver-based registered dietitian, tells SELF. “They’re important for our health because they have high amounts of essential vitamins, minerals, antioxidants, and fiber.”

The good news is that you can take tons of tiny steps to gradually start eating more of them—and no, you don’t need to channel your inner Martha Stewart to get it done. We’ve rounded up a bunch of simple and delicious ideas that’ll make clearing out your crisper a breeze.

1. Focus on adding veggies into one meal at a time.

Take it slow: You don’t want to go overboard trying to force them into breakfast, lunch, and dinner from the get-go. So start with just one instead, and why not make it your morning meal? Front-load veggies first thing so you can spend the rest of your day knowing you got some greens in.

2. Blend them in your morning smoothie.

Speaking of veggie-filled breakfasts: If you choose your produce wisely, you may not even taste it in your shakes.“Frozen cauliflower and spinach are two of the most common veggies used in smoothies for a reason: Their mild flavor gets masked very quickly with any fruit, nut butter, or nutritional powder,” Shafer says.

3. Chop them into a breakfast hash.

Cube your go-to root veggies, like sweet potatoes, carrots, or parsnips, and sauté them until tender with other tasty mix-ins, like onions and peppers. Then throw in more delicious add-ons, like a fried egg, sausage crumbles, or spicy salsa, to level up your hash even more.

4. Bake your veggies into bite-size egg muffins.

This meal prep-friendly hack will help you eat practically any veggie in the morning. Grab a muffin pan and spray with nonstick oil, add your precooked produce (like peppers, spinach, plantain, or tomatoes), and pour egg batter on top before baking, Shafer says. They reheat super well for breakfast on the go.

5. Make a mighty side salad you’ll want to eat.

“Adding a small daily salad to lunch or dinner is a great habit to get more antioxidant-rich leafy greens,” Shafer says. It all starts with finding your go-to base: If you prefer less bitter greens, reach for lettuce or spinach; if you gravitate toward bolder flavors, snag some arugula or radicchio, she explains. Swap in new dressings or crumbly cheeses to save your side from getting stale.

6. Experiment with new-to-you veggies.

You may just find an option you actually love, which beats forcing yourself to eat ones that just don’t appeal to you. Take root vegetables: If beets or radishes have always given you the ick, try out a different variety, like jicama or cassava. There are tons of different kinds, and each has its unique flavor and texture, Shafer says. Challenge yourself to test a new kind each month so you can find the right one for your palate.

7. Spiralize them for your favorite pasta recipe.

Buy a spiralizer ($17, Amazon) and transform zucchini, sweet potatoes, and beets into noodles. Top it off with your favorite sauces, like a bolognese or pesto, and don’t forget the buttery garlic bread to really make the meal complete.

8. Try a farmers market instead of a chain store.

There’s nothing tastier than in-season heirloom tomatoes, colorful Swiss chard, or fresh basil, and no better way to get them when they’re at their best than at a farmers market. An added bonus? You might leave with some delicious recipe recs from the growers who know the veggies best.

9. Bake them in a savory pastry.

Sauté some plantain, tomatoes, or spinach and fill them into a flaky empanada—no need to spend time making the dough yourself, since the kind from the freezer section works just fine. Stuff it with other ingredients, like hearty black beans or cheese, to add even more flavor and heartiness.

10. Purée legumes into a hummus.

You probably have cans of beans or chickpeas collecting dust in your cabinet. Use them up! Blend with veggies like roasted sweet potatoes or bell peppers to make a hummus. “[Dips] can enhance and make any meal a little bit more fun without breaking the bank,” Rhyan Geiger, RDN, a Phoenix-based registered dietitian and founder of Phoenix Vegan Dietitian, tells SELF.

11. Save time by snagging prewashed and chopped veggies.

Sure, they may cost a little more, but having them at the ready can make you more likely to actually reach for them for dinner or snack time, Shafer says. Toss chopped lettuce in a burrito bowl, shaved Brussels sprouts in a stir-fry, or pre-washed spinach into a dip.

12. Hide them in your juice.

Make your veggies even more hydrating by turning them into a homemade beverage. Try some refreshing combos like mango and celery or apple and ginger, and prep a big enough batch to keep in your fridge for an easy-access nutrient-rich juice.

13. Stew harder-to-chew veggies into soups or curries.

If you’re not a fan of overly crunchy produce like cabbages or Brussels sprouts, try using them in recipes that’ll soften their texture, Shafer says. For example, add green beans or collard greens into a stew or curry so they cook down and don’t need much chewing.

14. Level up those canned soups sitting in your pantry.

A can of soup is an easy weekday lunch, but some can be a little…skimpy. Add heartiness (and extra veggies) by tossing in broccoli or cabbage and letting it simmer to soften; that way, you can have a more filling lunch on the table stat, Samantha Cassetty, MS, RD, an NYC-based registered dietitian, tells SELF.

15. Add them to your favorite handheld.

Burgers or burritos are perfect vessels for extra produce. “These dishes typically include flavorful spices and proteins that work together [with veggies] for well-balanced bites and a variety of textures,” Shafer says. Make tasty, nutrient-packed tacos or wraps by folding in sautéed zucchini, spinach, tomatoes, leeks, Swiss chard, or peppers into your ground beef or turkey.

16. Turn them into pesto.

Blend veggies like spinach or peas with cheese, olive oil, and nuts—pine are classic, but you can also try almonds for a cheaper route—to make a delicious pesto. Slather it on grilled meats and fish or pour over pasta to add flavor, Shafer says.

17. Rice your favorite veggies.

Use a food processor to turn cauliflower or broccoli into rice. It mimics the texture of the grain, making it the perfect side for your meals. Stuff it into a burrito packed with hearty fillings or plate it alongside some grilled chicken.

18. Cut them up into bite-size snacks.

Spend some free time chopping veggies like carrots, cucumbers, peppers, and jicama into sticks, and store them in some Tupperware in the fridge for whenever you need an easy snack. Dunk them in a creamy hummus or onion dip for a little boost.

19. Bake them in a nostalgic and cozy casserole.

Casseroles soften hearty produce, like sweet potatoes or squash, since they require a long time in the oven, says Shafer. Pick a recipe your family swears by—you already know it’ll be a hit—and up the veggie quota even more by adding in a few scoops of frozen carrots or peas too.

20. Give plant-based dishes a shot.

Yep, even if you’re not a vegetarian or trying to eat vegan: Starting small with meatless Mondays can be a great way to build a habit of eating more veggies. Try swapping out steak for mushrooms, which have a similar meatier texture and flavor, or add cauliflower or eggplant to recipes like curries or stir-fries instead of a protein. Then, you can gradually increase the number of vegetable-based dishes you dig into each week until it becomes a consistent habit.

21. Mix them into the batter of your favorite baked goods.

Your mind might automatically go the savory route when you think about eating more veggies, but produce can help improve the texture of your favorite baked goods, too. Try grating zucchini into your muffin batter for a moist pastry or add eggplant to your brownie mix to make it fudgier.

22. Just douse them in your favorite sauce.

No, you’re not taking the easy way out by turning to dressings or dips. Cheese sauce or ranch simply makes veggies come alive, and if that makes you enjoy eating them, then do it up! Anything that stops those greens from going bad in your fridge is a win in our books.

Jessica Biel finds eating in the shower 'deeply satisfying' - Toronto Sun

Jessica Biel has opened up about her love of “shower eating” and insisted she wants to start a “movement” for anyone who is juggling too many tasks at home.

The Illusionist star even went so far as to share her key rules to successfully scoffing snacks while washing.

In a video posted on TikTok, Jessica said: “I’m just so thrilled everyone’s so interested. I really want to start a movement. A shower eating movement for people who are multitasking it’s just going to be such a huge relief in so many ways.”

She went on to explain how to manage shower eating – insisting a ledge for food containers is “helpful” and warning her followers to keep their mouth closed while chewing.

Jessica added: “Here are my rules for shower eating. A ledge is really helpful. Something you can stick your cup, your yogurt container, your coffee, your espresso, whatever it is you are enjoying.

“But I like to take a bite or a sip and put it on the ledge and then you do your thing. You wash your hair – keep the soap out – that’s a big deal. It’s pretty simple guys, you can do this. I find it deeply satisfying.”

Jessica – who has two kids with her husband Justin Timberlake – went on to explain she struggles to keep her mouth closed in the shower but it’s very important while eating and washing at the same time.

She added: “The only tricky thing is when you’re chewing, you got to keep your mouth closed because I still like to get under the water while I’m chewing, and for whatever reason, I want to open my mouth at the same time and spit water.

“I don’t know if that’s a childhood squirt gun situation, a deep rooted need to spit water in the face of someone. Maybe just because I get spit in the face with water all the time by my kids so I’m just ready at any moment to retaliate.”

She concluded by saying: “There’s the pro tip. Chew, do not open the mouth (and) do not let the shower water in. There you go, enjoy your shower-consuming.”

And right now, you can use our special Curator code (GLOBALHF20) to get free breakfast for life and up to 20 free meals when you sign up for your first box.

If you want to save time and eat healthier with the family this year, read on for a few tricks.

Get more buy-in from kids by planning weekly meals together. (HelloFresh)

1. Plan your meals together

Meal planning often falls on one person in the household, which can be exhausting. If that’s you, take back your time by making meal-planning a family affair. Grab a notepad or create a meal-plan board in the kitchen, then get everyone together to pick dinners (this can be while you’re already enjoying a meal).

Kids love to contribute selections to the weekly meal plan, which makes them likelier to eat dinner on their meal plan day. It also sets the week off to a great start because everyone knows what to expect all week long.

If you’re using HelloFresh, you can meal plan as a family by selecting 3, 4, or 5 of the 40-plus weekly meals on the menu. Each selection comes with a photo, estimated recipe time, and nutritional info so you can make smart choices for your family. Plus, you can swap the protein in many of the recipes.

The service also offers a wide selection of breakfasts, lunches, and snacks, so reach for those on busier weeks when you know you won’t have time to put it all together yourself.

Use these dry erase calendars to plan your meals and grocery list for each week. When your list is on the fridge – you and your family are reminded of ‘what’s on the go’ multiple times a day!

2. Take time to prep

Some believe meal prepping is a chore, while others love to throw on music or a podcast or divvy it up within the family and get it done. Either way, spending a couple of hours at the beginning of each week to pre-cut veggies or fruit, bake some chicken for easy lunches, or cook up grains so they’re ready to go saves massive time throughout the week — especially if you’ve got multiple activities or sports to get to.

With HelloFresh meals, prep time is also minimal, although it does depend on which meals you select. So, while you may have to chop veggies or cook grains, the portions are already divvied up, and everything is right in front of you.

Have kids take ingredients out of the bag and organize them for you, or get older kids to help wash, zest and cut up produce. Having everything in front of you and ready to go doesn’t just help you to stay organized, but it allows you to focus on the actual cooking part so things don’t burn. Plus, you’ll have more time to get a start on those dishes.

Kids can assist with the prep using this easy-to-use knife and cutting board set. The knife is specially designed not to cut the skin.

3. Make extra for leftovers

Leftovers make for great lunches or quick dinners as the week progresses, so don’t be afraid to make a little extra. With HelloFresh, a four-person meal kit is more than enough food for two adults and two young kids. So perhaps the kids can share one meal, leaving a bonus meal for the next day.

Or, if you have picky eaters that won’t eat salmon, for example, but you love it, make a four-person meal kit with salmon as a main. Save two portions for another night and serve kids the remainder of the meal with a different protein. Or, put together a quick “snacky dinner” with cut-up fruit, veggies, sandwich fingers, or a tortilla with shredded cheese. That way you get a delicious meal, and they get fed.

These food storage containers are perfect for leftovers and easy to stack and store when not in use. They’re also dishwasher and microwave safe.

More Recommendations

4. Try new ingredients on a budget

When you have picky eaters, the struggle to diverge from what they like is real. No one wants to spend extra money at the grocery store on a whole bag of something the kids might not eat, so parents often stick with what they know.

That’s another benefit of a meal kit like HelloFresh. They allow kids to try something new, but if they don’t like it, you can grab your backup staple item from the fridge and toss the leftovers into a dish for a perfectly portioned leftover lunch the next day. You haven’t invested a ton of money, there’s no food waste, and your kids have at least sampled something new.

5. Stock your freezer

When meats, poultry, or fish go on sale, buy in bulk, divide into portions, and freeze. Your cost per meal will go down exponentially. Plus, having a freezer full of easy proteins you can grab and cook as needed is an excellent way to pull together an easy dinner based on what you might have left in your fridge toward the end of the week.

Meanwhile, you can always salvage the ingredients if you’ve invested in a meal kit like HelloFresh and don’t use it that week. Save the recipe, freeze the protein, put aside any pantry items that will keep, then repurpose the veggies elsewhere. You can grab new produce the following week and use the rest of the kit then.

Don’t fall victim to freezer burn! Keep freezer-safe containers handy for buying in bulk or storing leftovers.

6. Eat as a family

It’s easy to fall into the habit of multitasking while eating. Throwing on YouTube for the kids so that you can respond to emails in between forkfuls may be necessary on a busy day. However, some studies have shown that families that eat together without distractions tend to eat less fast food and more produce.

That same research indicates that family meal time can encourage healthy eating habits and help with social and emotional development. It also promotes bonding, which can get more challenging as kids age and grow more independent.

7. Don’t be perfect

At the end of the day, as long as your family is fed and nourished, you’re doing okay. If your kids don’t eat enough veggies, or your picky eater filled up on Goldfish again, know that it happens. So what if you burned part of the meal or didn’t make every item (or any items!) from scratch? Know that you’re doing your best, and taking advantage of meal kits or pre-prepared items can be a lifesaver.

No one is perfect, and everyone calls in the backup pizza or hits the drive-through when necessary. Find what works for you and your family, and go with it. Letting go of perfection can only lead to healthier physical and emotional choices for the whole family.

Ready to try HelloFresh? Now’s a great time to take it for a spin. HelloFresh is currently offering free breakfast for life and up to 20 free meals. Sign up now for your first box using code GLOBALHF20.

“From the candidate restaurants, we narrow the list down with the expertise of our community managers and Trend Expert to curate a list as quirky, interesting, and unique as the Yelp Community itself. Top places to eat in Canada 2024: 11 Vancouver restaurants - Vancouver Is Awesome

From a tiny downtown spot with a wood-fired oven turning out Lebanese flatbreads to one of the city's oldest diners tucked away in a lumber yard, 11 restaurants in Vancouver have earned a place on a list of fan-favourite spots for a meal.

Every year, user-generated review platform Yelp puts out its ranking of the Top 100 Places to Eat in Canada.

For 2024, Manoush'eh took the highest spot for Vancouver, coming in third. Opened in 2017 and named for Lebanon's classic "pie," this family-run eatery cranks out hand-formed dough used as a base for anything as basic as some zesty za'atar or with all the meats and veggies, oven-fired, and served hot and fresh.

Manoush'eh is no stranger to the list, ranking high last year and in previous years; it has also landed on Yelp's list of the best places to eat in Vancouver

Also representing Vancouver in the top 20 are downtown sandwich spot Number E Food (12), South Vancouver's not-so-hidden-anymore gem Northern Cafe & Grill (14), and Tom Sushi (17). Another seven spots from Vancouver are included as well (full list below).

Outside of Vancouver itself, Richmond's Lamajoun (24) and Anar Persian Cuisine (87) made the list, as did North Vancouver's Pawans Indian Kitchen (23), Workshop Vegetarian Cafe (27), and Tour De Feast (94).

Annual list focuses on 'quirky, interesting, and unique' restaurants

Here's how Yelp comes up with the "Top 100" list: "To determine Yelp’s Top 100 Places to Eat in 2024, Yelp’s data science team starts by using the data generated from our community submissions," explains a media release.

"From the candidate restaurants, we narrow the list down with the expertise of our community managers and Trend Expert to curate a list as quirky, interesting, and unique as the Yelp Community itself. If a business with multiple locations appears more than once on the list, we keep the highest-ranked location," explains Yelp.

Jessica Biel Shares Her 'Pro Tip' for Eating in the Shower - Us Weekly

Jessica Biel Breaks Down the Rules for Eating in the Shower Properly
Leon Bennett/Getty Images

Jessica Biel is an experienced actress, producer and mother, her latest “pro tip” for … eating in the shower.

“Chew,” Biel, 41, shared in a recent TikTok video. “Do not open the mouth. Do not let the shower water in.”

The actress’ minute-long video was a reply to a TikTok commenter who wondered how Biel ate in the shower. “All your shower eating questions finally answered 🫡,” she captioned the Monday, January 22 clip, before launching into a barrage of helpful hints.

“A ledge is really helpful, something that you can stick your cup, your yogurt container, your coffee, your espresso. Whatever it is you’re enjoying. But I like to take a bite or a sip and put it on the ledge,” she explained. “Only tricky thing is when you’re chewing, you gotta keep your mouth closed. I still like to get under the water while I’m chewing and for whatever reason I want to open my mouth at the same time and spit water.”

Biel told her TikTok followers that it’s a “pretty simple” and “deeply satisfying” task before thanking followers for their inquiries.

“Guys, thanks for all these questions about shower eating,” she said. “I’m just so thrilled everyone’s so interested. I really wanna, you know, start a movement — a shower eating movement.”

Biel said that eating in the shower is the best “for people who are multitasking,” calling it “a huge relief in so many ways.”

Some fans were quick to agree with the actress, sharing their own shower eating experiences in the comments section.

“Currently eating a bag of Doritos in the bath while watching this 👌,” one commenter wrote. Another added, “I think it’s just called hiding from your family. 😂 That’s what I call it.”

Similar to the commenter, Biel made a joke about her kids within the TikTok. (Biel shares two sons — Silas, 8, and Phineas, 2 — with just husband Justin Timberlake.)

“For whatever reason, I wanna open my mouth at the same time and spit water,” she joked. “A deep rooted need to spit water in the face of someone. Maybe just cause I get spit in the face with water all the time by my kids, so I’m just ready at any moment to retaliate.”

Biel’s TikTok came a month after the first shared her shower “food for thought” in a separate video posted in December 2023.

“I think maybe some of you know this about me, but I love to eat in the shower. I love to eat and drink in the shower,” she revealed at the time. “Shower appropriate items like cereal or yogurt, coffee, tea, popsicles. I know, melt factor but safe, you know. Down the drain, anything drops, you’re good.”
